TURKEY MEATLOAF
- Mad Max Turkey Seasoning
- 2 1/2 to 3 pounds of ground turkey
- 2 eggs
- 1 sweet onion (finely diced)
- 1 sleeve of saltine crackers (crushed)
- 1 small package of ‘craisans’
- 1 can of cranberry sauce divided
- 4 slices bacon diced
- 2 cups shredded mild cheddar cheese
- 6 White Idaho Potatoes (peeled and chopped)
- 1 stick butter
- 1/2 cup – plus- Half & Half creamer
- Garlic Pepper (one tablespoon)
Mushroom Gravy (Tip: add a Tablespoon of Mad Max to the gravy)
Cook the bacon in a large skillet until crisp. Remove and reserve. Place the cut onions in the bacon drippings and cook until clear. Place the onions on a paper towel lined tray to cool.
In a large bowl, (and using plastic gloves) mix the ground turkey and crushed saltine crackers. Next add the eggs, ‘craisans’ and cool onions into the meat mixture. Continue to mix the ingredients plus adding a total of 1/4 cup of Mad Max seasoning into the turkey mixture.
Place the mixture into a greased aluminum foil loaf pan and then onto your preheated Big Green Egg set up for indirect cooking. The temperature should be 350 degrees and the cook time will be 50 minutes.
While cooking, take 1/3 of the cranberry sauce and heat on your stove in a saucepan to create a liquid sauce to glaze the meatloaf.
Take the meat off when ready and glaze with the cranberry sauce. Cover with foil and let stand for ten minutes.
Use the bacon grease to make your gravy with chopped mushrooms.
Boil the potatoes until done. Add the butter, cheese, bacon, creamer, and garlic pepper. (add more creamer if needed)
Use a blender to create some ‘loaded mash potatoes’.
Serve a slice of the meatloaf with mashed potatoes. Cover all with gravy and then add a slice of the cranberry sauce.
