PORK LOIN the EASY WAY
- 1 pork loin
- Dizzy Pig Pineapple Head Seasoning
- Spray olive or canola oil
- Baked Beans and Chips for sides!
Rinse the loin.
Trim the runner muscle from the loin and freeze for another time. Just use the round center muscle. Lay onto a cutting board and cut across the grain into 1” steaks.
Lay onto a platter and cover completely with the seasoning. Spray the steaks with the oil and then turn over to repeat the seasoning on the other side of the steaks.
Let the steaks rest for 30-45 minutes.
Start a fire on the Big Green Egg. (You will need to fill the firebowl with coal so that we can obtain at least a 500 degree temperature.) Use the plate setter feet up with the cooking grid on top. Place a cast iron cooking grid onto the plate setter feet so that it will preheat while the meat is seasoning. Important to use the flat side of the cast iron cooking grid. It will take the 30-45 minute seasoning time for the cast iron cooking grid to heat up to 500 degrees.
Cook: You will need tongs, aluminum pan, foil, and instant read thermometer.
Place as many of the steaks onto the cast iron cooking grid as possible. Close lid and wait two minutes. Flip over the steaks after two minutes and then wait another two minutes before checking their temperature.
145 degrees is the temperaure we are trying to obtain on the steaks. As the steaks reach 145 degrees interior temperaure, remove to the foil pan and cover with foil.
Cook all of the first batch and then add any more of the steaks that you might have.
Repeat the process.
Baked beans and chips are all you need to go with these yummy little steaks.
