SWEET POTATO BISCUITS
- 1 Bag of frozen skinless salmon filets (about 5 filets)
- Big Green Egg Citrus & Dill seasoning
- Olive oil
- Dizzy Pig Bayouish Seasoning
- 1-6oz container of Peach Yogurt
- Dizzy Pig Pineapple Head Seasoning
- 4 15oz cans sliced peaches in heavy syrup
- 1 8oz block of cream cheese
- 1 8oz package shredded Parmesean cheese
Rinse and pat dry the frozen salmon filets. Slice across the fish while still frozen with a sharp knife on a cutting board. Cut the filet into 4 or 5 slices to make it easier to serve. Lay them onto a oiled pan. Use a cookie sheet if using a gas or pellet grill. Use a grill topper with a foiled bottom if using the Big Green Egg.
Mix 2 tablespoons of olive oil into a small bowl with 1 teaspoon of the Bayouish seasoning and 1Tbs of the Citrus & Dill seasoning. Next add the Yogurt and mix thoroughly. Using a kitchen brush, spread the marinade onto the salmon pieces that you have cut. Cover with foil and let them rest so that marinade has time to infuse the fish.
Pre heat your grill to 350 degrees. Cook the foil covered tray of fish for 15-20 minutes.
They should be flakey when done. Trim the fat and Yogurt mixture away from the edges of the filet pieces before plating. Cover with cheese sauce recipe below.
Cheese Sauce: Drain the liquid from the 4 cans of peaches into a small stock pot. Cut the block of cream cheese into pieces and add to the peach juice. Heat on your kitchen stove until the cream cheese combines with the juice. Add 2 Tbs of the Pineapple head seasoning and the Parmesean cheese. Continue to heat until combined.
Use the biscuit recipe on a box of Bisquit Mix. Add the meat from one baked sweet potato and 1 tbs of cinnamon. Use a teaspoon to drop the mixture onto a greased baking tray. Place onto the grill at the same temperature and bake for 20 minutes.
Warm the peaches in a skillet on your stove.
Plate: Place 4 slices of fish onto a plate with two biscuits and 6 peach slices. Drizzle the cheese sauce over the entire plate.
