Iron Pot Hoppin’ John
Extremely Simple
- 5 12 oz. packages frozen blacked eyed peas
- 2 10oz cans of diced tomatoes and chilies drained
- 2 Onions chopped
- 1/2 Red bell pepper chopped
- 6 Cloves garlic, minced
- 6 Slices of bacon
- 4 Cups Chicken broth
- 4 Cups water
- Dizzy Pig Bayouish Seasoning
- 1 Tbs. Olive oil
- Salt to taste
- 6 Cups hot cooked white rice
- Your favorite link sausage
- Madison Fireplace and Patio Candied Jalapenos
Fire up the Big Green Egg to about 350 degrees with a full fire box and plate setter feet up. Place cast iron dutch oven or similar pot on cooking grid and saute bacon until almost crispy, 3-4 minutes. Remove the cooked bacon, and leave 1 Tbsp of bacon grease in the pot and add olive oil. Add the onions, celery, and bell pepper and saute until tender. Add garlic and saute until soft and frangrant, 2-3 minutes.
Combine the rest of the ingredients with the sauted vegetables and bacon. Bring to a simmer and season to taste. Cook for about 45 minutes.
Serve over rice with candied jalapenos, the grilled sausage, and nice hot piece of corn bread on the side… mmmm, mmmm.
