HONEY RUM GLAZED RIBS
- 2-4 Racks Baby Back Ribs
- Yellow Prepared Mustard
- Crossroads Seasoning
- 1/2 cup apple juice
- 1/2 cup apple cider vinegar
Glaze: 1 stick butter, 1/2 cup honey, 1/2 cup Rum.
Heat together in a saucepan on stove and let reduce by 1/3.
Cook: Preheat your BGE or Pellet Grill. Set up to cook indirect at 250 degrees.
Use Apple wood chunks or Apple Pellets for the cook.
Remove the silver skin from the underside of the rib cage using a paper towel and butter knife.
Completely cover the rack of ribs with a layer of mustard and then coat with the Crossroads Seasoning. Place onto your grill with the rib arch up.
Smoke the Ribs for two hours.
Combine the apple juice and apple cider. Place each rack onto a large piece of aluminum foil. (rib arch up) Add about 1/4 cup of the Apple juice & cider mixture onto each foil and then completely close the foil around the rack.
Place back onto the grill for another hour and a half. After that time, open the foil while still on the grill and glaze the ribs using a brush. Use all of the glaze on the racks.
Leave the foil open and close the lid on the grill so that the heat will set the glaze. 15- 30 minutes will be sufficient to set the glaze.
Remove from the grill, slightly close the foil and let the racks rest for a short while.
