Ingredients:
- 1 Pack of Bratwurst (usually 5 sausage to a pack)
- 1 large jar of sauerkraut
- 3 sweet apples (peeled and cut into small rectangles)
- 6 ounces of apple juice
- Mustard
- Dizzy Pig Crossroads Seasoning
Set up your grill for a slow smoke at 250 degrees. Lay the sausage out on a baking sheet and coat one side with a layer of mustard. Thoroughly cover with the seasoning. Turn over the sausage and do the same on the reverse side. Take to the grill and place directly on the cooking grates to smoke. This process will only take about an hour or less. The internal temperature needs to be 145 degrees inside the meat when removed from the grill.
Drain and rinse the sauerkraut. Add to a large aluminum baking pan. Mix in the diced apples. Slice the sausage into about 12 slices each and add to the pan. Pour in the apple juice and then mix the ingredients together. Tightly cover the pan with foil and place onto the grill. The cook time will be approximately 45 minutes to one hour at 300 degrees. Remove and let rest with one corner of the foil raised to allow steam to escape. Serve with buttered and toasted bread, and a cold sudsy beverage.
