BBQ, Bacon Meatloaf Sandwich
- 4 lb. Ground Beef
- 3 Eggs Beaten
- 1/2 Pack of Bacon
- 2 Cups Bread Crumbs
- 1 Onion Chopped1 Bell Pepper Chopped
- 1 Jar Madison Fireplace and Patio Bacon Bourbon BBQ Sauce
- 1 lb. Jimmy Dean Breakfast Sausage
- 2 Tbs. Dizzy Pig Crossroads Seasoning
- 1/4 cup honey
- French Fried Onions
- Slider Buns
- Sliced Cheese
- 10” x 7” x 3” Aluminum Baking Pan
In this recipe, we precooked the meat to remove excess grease. Cook bacon in skillet until crispy and set aside to cool. Drain excess grease leaving 2 tbs. for vegetables. Sauté vegetables in bacon grease until tender. Brown the ground beef and sausage and drain off the grease. Chop the bacon into bits. Combine meats and vegetables in a large mixing bowl. Add eggs, bread crumbs, 3/4 of jar of Bacon Bourbon BBQ sauce, and seasoning to mixture and blend thoroughly.
Preheat grill to 350 degrees and set up for indirect cooking. Pack meatloaf mixture tightly into baking pan. Place on grill for approximately 45 minutes until outside of meatloaf begins to brown. While meatloaf is cooking, mix remaining BBQ sauce with honey and simmer in sauce pan on stovetop.
Remove meatloaf from grill and let rest for 15 minutes. Cut meatloaf into 1/2 inch slices. Then glaze meatloaf slice with honey BBQ sauce mixture. Place on buns with cheese, BBQ sauce, and french fried onions. Enjoy with your favorite side dish.
