1 or more racks of Baby Back ribs

Pre heat the grill to 250 degrees. Cook indirectly on your grill using a Conveggtor.
Pull the membrane off the back of the rib rack by using a butter knife and paper towel.
Rub the rack on both sides with a small amount of mustard. Now, thoroughly coat the rack on both sides with the seasoning.
Add a few apple wood chips or chunks to the coals. Place the rack onto the grill with the curve of the bone facing up. Smoke for 90 minutes.
Remove and wrap each rib rack that you are cooking individually in a foil packet. Keep the curve of the bone facing up and wrap loosly. Before sealing the foil add about 1/4 cup of apple juice / apple cider vinegar (2 Tablespoons of each) mixture to the foil.
Place onto the grill and let steam in the foil for one hour.
After one hour open the foil pouch. Baste the tops of the rib rack with the Bacon Bourbon Sauce and let the sauce glaze onto the ribs for about 30 minutes.
Remove with some tongs being careful not to disturb the beautiful glaze. Serve and enjoy!
