2 pounds cajun style sausage or andouille sausage
4 boneless skinless chicken breasts
Dizzy Pig Bayouish Seasoning
1 large sweet onion diced
1 red bell pepper diced
4 stalks celery diced
6 toes garlic diced
2 cans Hunts fire roasted diced tomatoes
1 small can of tomato paste
1 can vegetable broth
1 can chicken broth
1 1/2 cups Uncle Ben’s Original Rice (important to use rice that has been parboiled)
Season the chicken and sausage with the Bayouish seasoning and cook indirectly on the grill at 300 degrees.
Remove the sausage and chicken from the grill when they reach an internal temperature of 165 degrees. Slice into small pieces.
On your stove, using a large skillet cook down the vegetables until they are soft.
Add the tomatoes and tomato paste, and continue to cook for about three minutes to combine tomato sauce with the vegetables.
Using a deep aluminum grill pan, add the meat and vegetable mixture.
Next add the rice, vegetable broth and chicken broth.
Stir all ingredients thoroughly together.
Cover the aluminum grill pan with foil and return to the grill.
Increase grill temperature to 350 degrees and cook the mixture for 35-40 minutes.
Serve in bowls with garlice bread.
