GUACAMOLE & SMOKED CHICKEN SOFT TACOS
Guacamole:
Make this sauce first so the flavors can meld together. 6 Avocados (peeled, pitted and diced)
2 limes juiced
1 tablespoon of cayenne pepper
1 tablespoon of garlic pepper
1/2 cup fat free sour cream
2 tsp sea salt
Combine all ingredients into a mixing bowl and then use a mixer to produce a smooth sauce. Refrigerate.
Marinade:
Place 5 boneless, skinless chicken breast into an aluminum pan. Pour one dark beer over the chicken. Next add 2 tablespoons of garlic pepper, one tablespoon of chili powder, 1/4 cup of chopped cilantro, 1 tablespoon of salt. Spoon all the ingredients over the chicken several time to mix and marinate. Cover and set aside in a cool area or refrigerator to marinate for 2 hours or overnight if possible.
Slow smoke the chicken on the grill at 300 degrees until they reach 165 degrees inside temperature. I like to use the marinade as a baste on the chicken while it is cooking. Baste about every 15 minutes.
Remove when done and dice into small bite size pieces for the Taco.
To Serve: Hold a small flour tortilla in the palm of your hand and spread a spoonful of the Guacamole into the center of the tortilla.
Next, place several tablespoons of the chicken onto the Guacamole.
Next, add a handful of Mexican style shredded cheese. I also like to spread a small helping of Queso white cheese onto the top of the tortilla to seal the Taco. This method is helpful if I want to roll it up like a burrito.
